Here was my latest experiment:
- 1 can black beans (I chose low sodium)- drained
- 1 cup spinach
- 2 cups egg whites
- 1 cup 0% FAGE yogurt
- 1 tsp xantham gum
- 1 tbsp baking powder
- 2 scoops Nectar chocolate truffle protein powder
Preheat oven to 350 degrees. Mix together all the ingredients except beans and spinach. Blend black beans and spinach in a blender, then mix back into the protein mixture. Spray oven-safe pan with Pam, and pour the batter into the pan. Bake about 30 minutes. And you have healthy brownies! Good for post-workout when you need some protein and carbs. Makes 8 servings.
