Lotsa Veggies…and COLD NOODLES!!

*This I meant to post yesterday but was having problems with my iPhone camera (pathetic, I know, I need to buy a real camera. Anyway)

Hi peeps!

How are you all doing? How was your weekend?

I went to my friend’s first figure show on Saturday night and she looked AMAZING!!! She won second in her class, which is great, but in hotness she definitely ranked FIRST! The gal who won first was a bit more ripped (but like I said not as hot as my friend!!) That was a definite highlight of my weekend!!

I have still been mellow due to my cold. I actually can live in human-land again, but I’m still not 100%. Today was my first weights workout in over a WEEK! Just took it easy, but was nice to be back in the gym. Still haven’t had a caffeinated beverage in over a week, too. I am patting myself on the back for that one! And still holding true to my previous “experiments” or resolutions or whatever you want to call them. Included in that, I have been buying boatloads of organic vegetables. What this really entails is going to Whole Foods and picking out some of the weirdest looking vegetables and saying “hm…I’ll try that…whatever that is…” And of course I don’t know how to cook these bad boys but I give it a shot.

Among some of the veggies I cooked:

Parsnip, Watermelon Radish, Beets, Taro, Rutabaga, etc (many unpictured)

And tried to turn them into chips (not so successful as chips because I cut them too thick, but I’ll work on it)(again, much unpictured- imagine a couple trays of these)

Intensely Long Green Beans!! Cooked with EVOO, garlic, Braggs, low sodium soy sauce

Beets & Parnsip- sautéed with EVOO, rosemary, and low sodium tomato soup

OMG this turned out DELICIOUS!!!! Deathly, dying delicious. I had to let em simmer for a long time- like 20 min for them to get tender enough to eat. Worth it!!!

And today I made a great healthy dish: COLD NOODLES!!!!!

Ingredients:

  • Kelp Noodles with Organic Green Tea (only like 30 calories for the whole BAG! RIDICULOUS!)(I love how crunchy these are, in contrast to Miracle Noodles)
  • Cucumber
  • Organic cabbage (that I cooked above)
  • A lil organic mushroom
  • Bean sprouts
  • Diced green onion
  • Organic chicken

Rinse the noodles, drain, and cut to smaller lengths.

KelpNoodles

Shred & cut all the veggies and chicken.

Prepare the sauce:

  • Generous heap of PB2
  • Splash of low sodium soy sauce
  • Dash of paprika
  • Dash of ginger
  • Dash of Braggs
  • Small amount  of vinegar
  • Lil bit of Thai curry paste (I had some red curry paste in the fridge)
  • Garlic
  • About 1 tbsp of Tahini butter
  • I also added (unpictured) about 1/2 scoop of Miracle Whey peanut butter protein powder (my review here)
  • Water, to make the consistency less thick and more of a sauce

Then I mixed the sauce with the veggies and chicken, and I was ready to eat!!!

I ate it with chopsticks and it was great!

Time always flies!! I have a ton of emails to catch up on,  training two gals in an hour, and more recovering from this cold to do 😉

    The noodles sound amazing! I made something like that a few days ago with shirataki noodles, gotta check out kelp noodles. And of course Asian food tastes better with chopsticks =]

    BEETS!!! Oh man, I eat those things like candy!! So good!!

    Now you’ve really got me curious to try kelp noodles! You said they are at Whole Foods right? Which section?

      In the Whole Foods where I shop, they are by the miso/hummus/salsa/cottage cheese…not sure if yours would have the same set up…but they are refrigerated, so that narrows it down 😉
