Today was another day of cooking. Why do I feel like I am ALWAYS cooking? Always buying groceries, always chopping, cooking, cleaning it up, and then I have no food? Yes, “food prep” is hard. I basically eat all my meals from home, so I always need to have healthy food prepared…It takes a lot of time! But I glad to have so many clean options, so I am not too tempted to veer off course.

Today I made
- A protein pancake variation (for breakfast)
- Roasted Chickpeas
- Roasted zucchini, radish, and rutabaga
- Spinach Cauliflower “Mashed Potatoes”
- Another protein pancake variation for lunch, cuz the breakfast pancake was just so darn good

The good news is that I am feeling a bit better from my cold. Best I have felt in a week. My voice is still deep and my boyfriend says tranny-like, but we won’t talk about that. I’m congested!!! Hopefully a few more days and I will be good to go. I have an appointment to go trail running with a buddy of mine on Friday afternoon, so I should be good by then! 😉
