Hello ladies and gentlemen, guess what, I’m back to cooking. For a while my fridge was bare because nothing seemed enticing to cook, and also I was sort of embracing spontaneity and flexibility and going out to eat and all that. But, as many of you probably relate to, while I loved that, there was a little part of me that wanted that discipline.
I couldn’t impose that on myself, though. I just couldn’t. I didn’t really want to. I wanted that freedom. But the past few days I felt ready to stock my fridge again, and cook. It’s been fun! It feels really good to have food prepared, too. I think the anticipation of my Dirty Thirty next month is inspiring me to do things that I know are healthy.
Last night I ate a delectable stir fry of aspargus, brussel sprouts, beet greens, and chicken, cooked in a generous amount of macademia nut oil. I threw some olives on top. YUMMO!
(P.S. Pickles and olives are my new obsession)
After dinner, I realized I was running out of food, so I went grocery shopping and cooked, so I’m prepared for the next few days.
Here are some things I made last night.
Omelettes with one egg, a buncha egg whites, and spinach
Roasted chicken with olive oil, carrots, onions, garlic, greens beans, and spices
Curry beef and green beans
Salad with chicken and tons of veggies, especially broccoli- perfectly paired with GODDESS DRESSING!!
So…I’m feeling good. About to go hit legs then see clients then chill.
